A fluke meeting with a customer at the restaurant where she was working led Chef Lulu De Rouen to the wonderful world of superyachts, and she hasn’t looked back. As Head Chef of motor yacht Helios 2, she spends her days coming up with enticing new recipes to treat her guests, often putting innovative spins on traditional favourites with astounding results.

Be it a romantic dinner for two, or a raucous party for the owner and their friends, Chef De Rouen has all bases covered when it comes to her cooking, and she’s passionate about working with only the best local suppliers to ensure quality is second to none.

 From her strong ability to cater to guests with intolerances to her signature dish that wows every time, Chef Lulu De Rouen talks us through a culinary experience on board MY Helios 2.  

Tell us a little about your background…who or what inspired you to become a chef?

I was born and raised in California in a little surf town called Manhattan Beach, and have been working in restaurants my whole life. My father is an amazing cook and I grew up cooking with him in the kitchen – he was definitely be biggest inspiration. I studied at culinary school in California and following that I worked for fine dining restaurant Patina for eight years in LA.

Who are your chef heroes?

My chef mentor growing up, Chef Paul Perdome - my roots are from New Orleans.

How did you come to work as a superyacht chef?

It was a fluke. A customer of my restaurant asked me to cook on their yacht for a trip and after that I was hooked. I moved to Fort Lauderdale and never looked back.

How would you describe your culinary style?

Freestyle. I’m not one that likes to follow recipes so I just go with the flow and cook what I feel like that day.

What’s your signature dish – what has really wowed your guests?

While my favourite type of cuisine is Asian, my signature dish has to be roasted New Zealand lamb rack marinated in chermoula and served with mint emulsion. Delicious!

Where do you get inspiration and ideas for creating your own menus?

By speaking to and brainstorming with other chefs in the industry. Instagram and Pinterest are also a great source for ideas. I also look to what the owners are leaning towards and then use cookbooks so I can create my own spinoffs.

What’s your favourite restaurant and why?

Anjin in Orange County. It’s a hole in the wall Korean BBQ that’s back home and it is hands down the best food. I love taking my friends to experience a new style of cuisine, and cooking your own food there adds so much joy. They also have the best sparkling Sake that pairs amazingly with the beef short rib and table side fried rice.

What’s the secret to cooking high quality food on board compared to ashore?

Working with local ingredients that are in season and fresh. Keeping it simple and letting the produce speak for itself.

What are your favourite destinations in terms of local produce?

Nothing can touch the Nice market in France for their fresh fruits, veg and spices.

What’s the most unusual ingredient you’ve come across on your travels?

I once had the boss ask me to cook and serve a Nautilus he caught in Palau.

How do you manage special dietary requirements such as vegetarian, vegan and gluten-free?

Always have gluten free basics on hand as a rule. Prepare for those requests as well as you can before you even receive them – that way you are always covered. Even if a guest does not specify dietary requests on the preference sheet, I always plan on having someone with a gluten intolerance. As with everything on a superyacht we are in the hospitality business, there is no request we cannot cater to. It’s our job to find a way to make it happen and ensure the happiness of our guests.

Are you seeing any trends at the moment – what’s on the horizon?

Trends come and go with the seasons, but health and clean eating is definitely something that has come to stay. People are more concerned now about what they put into their bodies than ever. Healthier lifestyles mean translating food that not only tastes delicious but also looks sexy and fits into exactly what the guest requires.

As well as creating beautiful dishes, do you get involved in table decoration?

I have a rock star interiors team that pairs my food with a table to match every service, so my help is not needed when it comes to the table décor during the season. We work on many ideas as a team pre-season – bouncing off of one another has never let us down.  

Who chooses which wines to stock on board?

My chief and 2 nd stew have a wealth of knowledge when it comes to wine. They take the courses they can and are always researching new wines and looking for the local varietals in our locations that will pair with my food and that the guests will enjoy.

What’s your view on sustainable sourcing and buying local wherever possible?

Wherever we are I always try to buy local and support local small business. Finding suppliers who may be a little off the well-known track – especially in the Caribbean - always pays off.

What do you most enjoy about working as a superyacht chef?

Travelling, even if it may be limited sometimes. Meeting new people from all around the globe is always a plus, too.

What have been some of the highlights and best moments while working on board? 

BBQing with Jimmy Buffet on the sundeck is up there!

What is your future ambition – what would you like to do when you eventually move ashore?

I would love to work with children, animals, and the elderly. My heart has always been pulled towards helping the community and the less fortunate.

Hi Amanda! Sorry for taking this long to respond. Again, we all loved our time in the boat. Helios crew is superb and really make a difference! Here is my contribution. The boat setup is very good; I really like the equal sizes of the 3 master bedrooms. Internal decoration is good. The double berth rooms are ok for 3 kids if they aren’t grown ups, which is our case. The jetski was heavily used, and my kids had a blast. Nico was a great professor, and taught them all the radical tricks. They loved him! Finally, I would upgrade the AV to make it very easy to use iPods or cel phones, so customer can easily play their music. The food and drinks: We love Greek food, and the menu served was right on the spot. Their Greek wine selection was already good enough, but Babis surprised us with the wine from my previous list to Good life! Very nice from him! The itinerary: Can’t add anything to it. Lawsuit naming Sean ‘Diddy’ Combs as co-defendant alleges his son sexually assaulted woman on yacht

LOS ANGELES (AP) — A lawsuit that names  Sean “Diddy” Combs  as a co-defendant alleges that his son Christian “King” Combs sexually assaulted a woman working on a yacht chartered by his father.

The suit filed Thursday in Los Angeles Superior Court says Sean Combs created the circumstances that led to the assault and paid to cover it up afterward. It’s the latest in a  series of lawsuits  accusing the producer and music mogul of sexual misconduct, and it comes amid a federal sex trafficking investigation that led Homeland Security agents to  raid his homes in Los Angeles and Miami  last week.

Grace O’Marcaigh, who worked as a crew member and a bartender on the boat, says that in late December 2022, Christian Combs pressured her to drink tequila that she believes was spiked with other drugs. He groped her breasts and genitals and attempted to force her to perform oral sex, the suit alleges.

The Associated Press does not typically name people who say they have been sexually abused unless they come forward publicly, as O’Marcaigh has done. She also consented to being named through her attorneys.

Aaron Dyer, an attorney for Sean and Christian Combs, called the lawsuit “lewd and meritless.”

“We will be filing a motion to dismiss this outrageous claim,” Dyer said in a statement.

Dyer called the investigation that brought  last week’s raids  “nothing more than a witch hunt based on meritless accusations made in civil lawsuits.”

Sean Combs, who chartered the yacht throughout the holidays in 2022, “had full control of the staff and premises” and created circumstances where her assault was not only tolerated but encouraged.

O’Marcaigh, who was 25 at the time, said when Christian Combs, then 24, came aboard late one night, he appeared heavily intoxicated and began giving her inappropriate attention.

She said the two were in a music studio on board the ship, where producer  Rodney Jones, who filed his own lawsuit  in February, was told to be available around the clock for Sean Combs to work on his next album.

O’Marcaigh said in the suit that Christian Combs was insistent that she take shots of tequila, and she drank out of obligation.

The suit alleges he became increasingly aggressive with her, violently grabbing her arm as she tried to get out of the situation then groping her. The drinks made everything blurry, unusually quickly, the suit says.

Microphones in the studio, where Jones was told to capture everything, recorded their exchange, and the lawsuit includes a transcript where O’Marcaigh demands that Christian Combs stop touching her.

The suit alleges that he later continued the assault in the ship’s movie theater, which was used as a spare sleeping area and where she was attempting to find a place to spend the night because the rooms were all taken, before another crew member appeared and he stopped.

O’Marcaigh told the yacht’s captain about the assault the following morning, but she alleges that after Combs gave him a large amount of cash the same day, the captain failed to meaningfully investigate or take any action.

The suit says O’Marcaigh was eventually fired in retaliation and has since been unable to find work in the music industry where she had planned to build a career. It says since 2022, she has suffered severe emotional trauma.

The lawsuit seeks damages to be determined at trial.

Christian Combs is also a musical artist whose song “Can’t Stop Won’t Stop” with Kodak Black topped Billboard’s Mainstream R&B Hip-Hop charts in 2022. He was at his father’s Los Angeles home during last week’s searches, during which he and his brother were handcuffed but not arrested.

The producer Jones’ federal lawsuit, filed in February by Tyrone Blackburn, the same attorney as O’Marcaigh’s suit, includes allegations that Sean Combs coerced him to solicit prostitutes and pressured him to have sex with them.

Dyer’s statement said the newest lawsuit is “filled with the same kind of manufactured lies and irrelevant facts we’ve come to expect from Blackburn.”

He pointed out that U.S. District Judge Denise L. Cote criticized Blackburn in a separate lawsuit on Wednesday and referred him to a disciplinary committee for a “pattern of behavior” where he “improperly files cases in federal court to garner media attention, embarrass defendants with salacious allegations, and pressure defendants to settle quickly.”

Blackburn responded in an email that “a referral is not a sanction” and the statement from Combs’ lawyer was an attempt to “deflect and distract.”

“Christian Combs sexually assaulted Ms. O’Marcaigh, and we have it on tape,” Blackburn said.

Several lawsuits  have brought public scrutiny to the music and business mogul, beginning with a November suit from his former protégé and girlfriend, the  R&B singer Cassie , which alleged years of sexual abuse, including rape. It was  settled the following day .

Combs and his attorneys have denied all of the lawsuits’ allegations.

Combs, a three-time Grammy winner and the founder of Bad Boy Records, is among the most influential hip-hop producers and executives of the past three decades. He turned his hip-hop empire into a broader business empire that includes  private-label spirits , fashion, and a  TV network .
